Summer's Bounty: Homemade Genovese

I have made the most wonderful discovery of an organic vegetable stand near my apartment (address below).

I decided to make genovese pasta that evening. ジェノベーゼパスタを作ってみた!
Here's my recipe, give or take a few teapoons of stuff:


Spaghetti Genovese
serves 2-3

Genovese sauce:
*3 stalks of basil, leaves removed from stem
*2 garlic cloves
*4 Tbsp fresh parmesan cheese
*5 Tbsp pinenuts 
*4-5 Tbsp olive oil, maybe more?
Salt, pepper to taste

Zucchini sliced 1/4 inch rounds then halved
Eggplant sliced 1/4 inch rounds then halved
Half onion, sliced (stem to root)
1 gobo root, quartered and cut into 2 inch pieces. Soak in water and dry, if time permits.

Spaghetti 200g
1 potato, peeled and cut into 1 inch cubes

Combine all * marked items in food processor and mix until desired consistency. I prefer my genovese a bit bumpy, but some people like smoother. I used my hand-held mixer food processor, but it is also possible to use a mortar and pestle or blender. If the genovese is not mixing well, add more olive oil. Add salt and/or pepper to taste.

Add 2 Tbsp olive oil to large fry pan and stir-fry onion, zucchini, and eggplant until golden brown. Turn off heat and leave in fry pan.

Boil water and add spaghetti. Add potatoes in at 6 minute mark or microwave and mix in later. Be careful not to over-boil potatoes or they will dissolve (not saying I did that, but maybe I did)

Return spaghetti and potatoes to fry pan with onions, zucchini, and eggplant. Add 2-3 large Tbsp of genovese sauce, or more, and mix until sauce evenly coats the veggies and spaghetti. 

Plate and top with more parmesan cheese. The more cheese, the merrier!

野菜たっぷりジェノベーゼ
2人〜3人分


ジェノベーゼソース:
*バジル葉      3束分
*ニンニク      2掛けら 
*パルメザンチーズ  大さじ4 (あれば生チーズ)
*松の実       大さじ5 
*オリーブオイル   大さじ4−5
*塩と胡椒
---------------------------------
ズッキーニ      1 半切り、スライス
茄子        1 半切り、スライス
玉ねぎ       半分 スライス
ゴボウ       1本 4つ切り. Soak in water and dry, if time permits.

スパゲッティ     200g
ポテト       1個 ピーラーで皮をむいて、キュブ切り

*マークものを全部フードプロセサーに入れ、よく混ぜる。混ぜにくい場合にはもっとオリーブオイルを入れます。好きに塩と胡椒加えます。

フライパンにオリーブオイル2 Tbsp 入れ、中火でズッキーニ、茄子、ゴボウ、玉ねぎをソテーします。火を消し、そのまま置いときます。

スパゲッティをお湯に入れ、ポテトも6分ぐらい茹でる。

茹でたスパゲッティとポテトを野菜が入ってるフライパンに加え、ジェノベーゼソース2−3大さじをよく混ぜる。

お皿に乗せ、パルメザンチーズ上に掛けて完成です!
